Edible Flowers And Entertaining: Corn Tortillas

Edible flowers can be a great way to add an extra special touch when entertaining guests. Some of my favorite edible flowers are pansies. Pansies come in the Spring and if you’re lucky you can get them to survive throughout the garden season. We add them to salads, garnish dishes with them and even dress our favorite cocktails. One of my personal favorite ways to use pansies is by making homemade “flower tortillas”. They are so simple to make and are sure to wow your guests. 

Recipe:
2 Cups Masa Corn Flour (Gluten Free)
1 ½ Cups Warm Water
1 tsp Olive Oil
1 tsp Sea Salt
Parchment Paper Or Plastic Wrap
Tortilla Press purchased online

Step 1-3: Combine masa corn flour with water, olive oil & sea salt. Once combined let it rest for about 5 minutes. The dough should feel soft. If it feels too dry add a teaspoon of water. 

Divide dough into 19 equal balls by rolling them one by one by hand. Cover them with a damp cloth to keep them soft and moist. 

Step 4-5: Line your tortilla press with parchment paper or plastic wrap. One by one place a ball of dough in between and press them until each tortilla is about 5-6 inches in diameter. Arrange your pansies on top of the already pressed tortilla and re-press the flowers into the tortilla.

Heat a skillet or griddle to medium heat. Carefully peel the tortilla from the parchment paper and cook them flower side up for about 40 seconds.
